Sweet dreams are made of this. Pastry chefs Ian Burch and Darren Purchese are the Willy Wonkas of South Yarra. Their cake, chocolate and dessert-filled studio has fast become a beacon for sweet-toothed masses during the daily 3pm slump. For Burch and Purchese a successful dessert is all about layering flavour combinations; some, such as white chocolate and raspberry are natural partners (like the chefs themselves), some are rather more unexpected. One of the most popular treats at present is a somewhat adventurous concoction of avocado, mint, cucumber, apple, yogurt and lime.

Away from the ready-made, eat-me-now desserts, the studio also provides take-home goodies they say will help you “pimp your pud”. You can experiment in the safety of your own kitchen with everything from exploding candy to half chocolate, half salted caramel spreads (just try not to eat it all straight out of the jar) to pots of freshly-harvested honey from their own rooftop bees. If that doesn’t spark cravings; their edible sculptural art or inspiration wall consisting of hundreds of drool-inducing ingredients certainly will.
